Dulce De Leche Brownie Cookies
Sift the Cacao Powder.
Beat the Eggs, Sugar and Cacao Powder with an electric mixer until it becomes a cream, you will still be able to see some sugar granules.
Sift the Flour with the Baking Powder.
Using a spatula add the flour and butter together slowly in small batches (Start with the flour first and then the butter).
There is no need to let the dough rest.
Make small balls of about 90g.
Making a hole in the middle of the ball with your finger incorporate the Dulce de Leche into the hole.
Close the hole and maintain the dough looking like a ball.
Place the balls in a tray covered in baking paper, widely spread as the balls will expand outwards.
In a pre-heated oven at 200C, cook for about 15 minutes.
