Ingredients

 2 Apples
1 OrangeUsed for preventing the apples from browning
 100 g Unsalted ButterRoom Temperature
160 g Plain FlourFlour needs to be sifted first
 2 Large Eggs
 150 g Sugar
 15 g Baking Powder
3 tbsp Heaped Table Spoons of Doulsi Dulce de Leche
 Lemon Zest
Tools you will need
20cm Loose Base Deep Cake Tin
 Electric Mixer or Stand Mixer

Directions

1

Peel your apples and slice them in half. Remove the centers with a spoon or knife. Slice each half into 4 pieces or more, depending on whether you like thin apple slices or chunkier slices. We recommend them to be slightly larger as the cake is not very tall. Place your apples pieces in a tray.

2

Squiz the juice of one whole orange on your apples. Stir the apples slices in the juice a little. This prevents your apples from browning.

3

Butter and flour only the sides of the 20cm bake tin. The base only needs to have a layer of butter, no flour.

4

Apply the Dulce de Leche evenly on the base of the tin. Place your apples in any style you like. Remember that this will be the top of the cake once we finish so you can get creative here.

5

Pre-heat your oven to 180 C, lower to 170 C when placing your cake in.

Cake Batter
6

Mix eggs and sugar together at a medium speed for about 1 minute. It just needs to combine.

7

Add butter and turn the speed up 1 or 2 levels and stir for another 3 minutes. If you find that the mixture doesn't become creamy and is still a bit crumbly don't worry.

8

Add your orange peel.

9

Combine the sifted flour and baking powder together, give it a little stir. Alternatively you can sift the flour with the baking powder as you incorporating into the batter.

10

Start at a low speed as you add the flour and baking powder then ramp up the speed to high. Mix for about 2 to 4 minutes, the batter will be creamy and relatively dense.

11

Evenly distribute the cake batter on top of the cake tin where your apples are. Don't apply much pressure just guide it into where you need slowly.

12

Take to the oven for 30-35 minutes. Using a wooden skewer, pierce the center of the cake and if the skewer comes out clean (no little pieces attach to it) then you know its done.

13

Give it 5 minutes or so before taking it out of the tin. Remember that the 'bottom' of the cake is technically the top of the cake, so flip your cake when taking it out of the tin.

14

You can serve hot or cold and if you want a little extra add some ice cream on the side.
